Naturally leavened sourdough, butter-laminated croissants, pies that follow the seasons and espresso pulled with care. All of it baked by hand before the sun clears the hills.
Our story
Hilltop Crumb began with one stone-deck oven, a handful of early risers and a jar of starter passed down from a grandmother’s kitchen. We still mix, shape and bake everything by hand, right here in Escondido.
Our flour is stone-milled in California, our butter is cultured, and our fruit comes from farms close enough to visit. No shortcuts and nothing par-baked. Just patience and a very early alarm.

Kind words
We know most of our customers by their order. A few of them were kind enough to put it in writing.
The country loaf ruined grocery-store bread for our whole family. Saturday mornings are now planned around it.
A perfect cortado and a warm almond croissant. They remembered my order on my second visit.
I brought a pastry box to a team meeting and people still ask me where it came from. Easiest win of my week.
